Breakfast Baked Apples

One of the best things about fall is fresh baked apple pie, but pie is not really your best choice for breakfast. Instead, start your day with these incredible breakfast baked apples. They are stuffed with oatmeal, cinnamon, maple syrup, and can be topped with dried cranberries or raisins, and chopped pecans. It is the perfect combination of warm and hearty for a cool fall morning.

This recipe is easy but it does take some time so be sure to try it when you are not in a hurry.  Prepare the oatmeal and spoon it into the hollowed out apples and bake, then top with your choice of toppings.

Makes 4 servings and the preparation time is about 45 minutes.

 

Ingredients:

2 cups old-fashioned rolled oats

3 cups. water

2 tbsp. maple syrup

1 tbsp. ground cinnamon

4 large baking apples, tops sliced and insides hollowed

2 tbsp. dried cranberries

2 tbsp. chopped pecans

 

To Prepare Your Breakfast Baked Apples

1) Preheat oven to 400°. In a medium saucepan over medium-low heat, combine oatmeal and water and stir occasionally until creamy. Stir in maple syrup and ground cinnamon and let cool slightly.

2) Transfer apples to a glass baking dish and spoon in oatmeal. Bake until apples are soft and bubbly, about 35 minutes.

3) Top oatmeal with cranberries and pecans and serve.
