Curried Chicken Salad with Apples and Raisins

This is a great make and take recipe perfect for the warm summer weather. You can prepare a double or triple batch on the weekend and have it for lunch through the week. This chicken salad also makes a great appetizer for parties or picnics.

This fruity and spicy chicken salad is versatile. It makes a great lunch as a sandwich on whole wheat bread or stuffed into a pita. You can also take it as a little on the go snack that goes great on whole-grain crackers.

Take a little freedom and try some other flavor combinations, throw in some match-stick carrots or some shredded cabbage. 

Ingredients for Curried Chicken Salad

Makes about 2 servings (about 1 cup)

¼ cup low-fat mayonnaise

1 teaspoon curry powder

2 teaspoons water

1 cup chopped boneless skinless grilled Lemon-Herb Chicken (about 4 ounces)

¾ cup chopped Braeburn apple (about 1 small apple)

1/3 cup diced celery

3 tablespoons raisins

1/8 teaspoon salt

 

Directions for Curried Chicken Salad

1)  Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well balanced.

2) Add the grilled Lemon-Herb chicken, chopped apples celery, raisin, and salt.

3) Stir mixture until combined.

4) Cover and chill
