Our first recipe of October we are giving you more pumpkin pie…sort of. Healthy Fudgy Pumpkin Pie Energy Bites are a great way to enjoy a little bit of this fall favorite while on the go. Fudgy Pumpkin Pie Energy Bites

These fudgy pumpkin pie energy bites are a great make ahead snack for anybody leading a busy life. You can make a big batch of these on Sunday, throw them in snack size Ziploc baggies and have a quick, ready to eat snack anytime of the day. Grab some on your way to the gym, throw a couple in your lunch bag or take them along to the kids’ sporting events.

This recipe makes about 19 bites and only takes about 15 minutes to prepare plus 30 minutes of refrigeration time. You may want to double or even triple the recipe if you are making them for the whole week.

Here is what you need and how to prepare your healthy fudgy pumpkin pie energy bites:

Ingredients:

1 cup 100% Pure Pumpkin Puree

½ cup Roasted Almond Butter

1-2 tsp Vanilla Crème-Flavored Stevia Extract (to taste)

2 tsp Ground Cinnamon

¼ tsp Salt

1 1/2 cup Quick Oats

 

To Prepare Your Pumpkin Spice Waffles

1) In a stand mixer bowl fitted with a beater attachment, add the pumpkin puree, almond butter, stevia extract, cinnamon and salt. Mix on low speed.

2) While mixing, add the quick oats.

3) Scrape down the sides of the bowl and mix one last time. Cover the bowl and refrigerate for 30 minutes.

4) Line a cookie sheet with parchment paper. Use a cookie scoop to portion out the dough and place on the prepared cookie sheet. Roll the dough into balls. Serve immediately or cover and refrigerate for later!
